Before academia, I was a foodservice design consultant.
Working with clients, I prepared drawings like this one:

I would also select equipment, prepare specifications, and coordinate construction with the architect, contractor, and foodservice equipment dealer.
The drawing shows a cash operation -- "The Commons" -- in the Student Alumni Center at the Moody Bible Institute.

The counters were built to my design by Refcon. They did a splendid job.
